Grab a bowl of refreshing Kongguksu (
콩국수), a purely vegetarian and healthy dish popular in Seoul during the hot summer days. Kongguksu is a dish consisting of somen noodles in a chilled soybean milk/soup. The dish can be enjoyed plain with just the noodles, or garnished with tomato slices, cucumber, scallions, and sesame seeds. I prefer having mine with fresh vegetables because it enhances the flavor of the soybean broth! Add a dash of salt to taste and this delicious bowl of cold noodles will keep you cool while satisfying your tastebuds!
